Reading about how the Colorado river system is on the brink of collapse in the US, with 70% of its water usage being agricultural irrigation, made me think of how precision fermentation and other new food creation technologies may be all that saves us. You can see it entering the mainstream in various places, in fast food chains for example. This is manufactured meat, often using animal cells as a starter. People still have very old-fashioned ideas about what that means, as if that means it's unhealthy or 'processed'. In fact with the new technologies you'll get the same or better flavour, and it'll be much better for you too. And potentially we'll be able to retire huge amounts of our farmland.
